The Cuisine

Our passion for cooking has always been at the forefront, that is why we base our work first and foremost on the quality of the products we use for our dishes.

We have chosen to purchase our supplies locally - especially from the Val di Cecina – from small producers who can ensure the authenticity of their organic and biodynamic crops.

We personally tend to a two and a half acres vegetable garden with its crops for exclusive use in our kitchen. Our bread, pasta and sweets are homemade.
